If you're not nut-allergic, this is one of the most-loved Indian desserts in the world — and ours is made the proper way: chenna pillows poached in lightly sweetened milk, infused with green cardamom and saffron, chilled, and finished with crushed pistachio. The texture is delicate, the cream is fragrant, and two pieces is the perfect close to a curry meal.
