Why we keep tikka boneless

Most UK Chicken Tikka is bone-in. We disagree with that on principle. Boneless cubes char more evenly, take more marinade per surface area, and don't leave you fighting with a drumstick at the start of a meal. Every chicken cube on the menu — tikka included — is hand-trimmed boneless tender chicken.

The marinade is yoghurt, ginger, garlic, ground spices and a measured chilli — never a synthetic red dye. The colour you see is real char from real tandoor heat. No cashew paste, no nut tikka masala; just the cubes, the char, and a wedge of lemon.
