Why we hand-fold ours
A factory samosa has the wrong everything — too thick a shell, sweet filling, machine-folded crease that splits in the fryer. We hand-fold ours. The shell is rolled thin, the filling is potato and green peas with ginger, cumin and amchoor (dried mango powder), and the fold is tight enough to crisp evenly without splitting.
Nut-free — no cashew, no almond, no peanut, no pine nut. Suitable for nut-allergic guests. No onion in the filling for guests who avoid onion. Vegetarian — no meat stock, no animal fat in the dough.
Three pieces is enough for one as a snack, or to share between two as a starter alongside a curry.
